A comforting, nutritious one-pot meal with the goodness of moringa!
Ingredients (Serves 2-3)
- ½ cup rice (any variety)
- ¼ cup yellow moong dal (or masoor dal)
- 1 small carrot, diced
- 1 small potato, diced
- ½ cup chopped spinach or any greens (optional)
- ¼ cup fresh moringa leaves (or 1 tsp moringa powder)
- 1 small tomato, chopped
- ½ tsp turmeric powder
- ½ tsp cumin seeds
- ½ tsp grated ginger
- 1 green chili (optional)
- 1 tbsp ghee or oil
- Salt to taste
- 3 cups water
- Fresh coriander for garnish
Method
- Rinse & Soak: Wash rice and dal, then soak for 15 minutes.
- Sauté Spices: In a pressure cooker or pot, heat ghee, add cumin seeds, and let them splutter. Add grated ginger and green chili.
- Cook Vegetables: Add chopped tomatoes, turmeric, and salt. Sauté until soft. Then, add carrots, potatoes, and spinach.
- Add Rice & Dal: Mix in soaked rice and dal, stir well.
- Cook: Add 3 cups of water and pressure cook for 3 whistles (or cook in a pot until soft).
- Add Moringa: Once cooked, stir in fresh moringa leaves and let them wilt for 2 minutes.
- Garnish & Serve: Top with coriander and a drizzle of ghee. Serve hot with yogurt or pickle!
