Moringa Pesto Pasta

A healthy twist on the classic basil pesto!

Ingredients (Serves 2-3)

  • 1 cup fresh moringa leaves (or 1 tbsp moringa powder)
  • 1 cup fresh basil leaves
  • ¼ cup walnuts or almonds
  • 2 tbsp olive oil
  • 1 garlic clove
  • ¼ cup grated Parmesan
  • Juice of ½ lemon (optional)
  • Salt & black pepper to taste
  • 200g pasta of choice

Method:

  1. Blend moringa, basil, nuts, garlic, lemon juice, and olive oil into a smooth paste.
  2. Mix in grated Parmesan, salt, and pepper.
  3. Toss with cooked pasta and serve!
