● 1/2 cup moringa leaves (or 1/2 tsp moringa powder)
● 1 small onion, chopped
● 1 small tomato, chopped
● 2 garlic cloves, minced
● 1/2 tsp turmeric powder
● 1/2 tsp cumin seeds
● 1/2 tsp mustard seeds
● 1 green chili, chopped (optional)
● 1 tbsp ghee or oil
● Salt to taste
● 2 cups water
● Fresh coriander for garnish
Method:
1. Wash and pressure cook the dal with turmeric and water until soft. Mash slightly.
2. In a pan, heat ghee/oil, add mustard and cumin seeds. Let them splutter.
3. Add garlic, onions, and green chili. Sauté until onions turn golden.
4. Stir in tomatoes and cook until soft.
5. Add moringa leaves (or powder) and sauté for 2 minutes.
6. Mix in the cooked dal and salt. Simmer for 5 minutes.
7. Garnish with fresh coriander and serve hot with rice or roti.
