A healthy twist on the classic basil pesto!
Ingredients (Serves 2-3)
- 1 cup fresh moringa leaves (or 1 tbsp moringa powder)
- 1 cup fresh basil leaves
- ¼ cup walnuts or almonds
- 2 tbsp olive oil
- 1 garlic clove
- ¼ cup grated Parmesan
- Juice of ½ lemon (optional)
- Salt & black pepper to taste
- 200g pasta of choice
Method:
- Blend moringa, basil, nuts, garlic, lemon juice, and olive oil into a smooth paste.
- Mix in grated Parmesan, salt, and pepper.
- Toss with cooked pasta and serve!
